I'd like to be able to focus both my guide scope and my imaging scope from my computer, is it possible to use 2 FCUSB controllers?

Unfortunately, this is not possible from the same computer. This is a downfall of USB in general, it is very difficult to differentiate between two identical devices plugged into the same computer. We are working on ways to try and solve this problem, but have not come up with an elegant solution yet. We are thinking about coming out with a dual motor control version of the FCUSB so that you can control two motors from a single USB box, but it may be months before we get this to market.

I assume Shoestring makes the JMI product as well? Would I be able to run a JMI PC focus and FCUSB? I tried to connect to the FCUSB with the JMI driver and it would not recognize the FCUSB.

Iver and I have been working on ideas to solve the 'two focuser problem". I have a setup working here. I am going to let Iver evaluate it. Assuming he likes it, I will release it as a new product.

It might be off topic.
But I wonder if a FCUSB and be used with other products from you? Like one FCUSB, one GPUSB, and one DSLR shutter control?

I tried out the new FCUSB2 controller and I was able to control the focuser on my imaging scope with the FCUSB and the focuser on my guide scope with the FCUSB2, I was also able to control both focusers through the ASCOM drivers with focus max. The two controllers work great together, thanks for getting that product out so quick! What great service.
